Brown Rice Cous Cous Salad {gluten free, dairy free}

No grain cooks faster than cous cous, but this grain comes from wheat. I recently found out about brown rice cous cous from Vitacost.com and I’m hooked! It’s gluten free because it’s made from roasted brown rice, and the flavor is nutty and satisfying. You can cook the brown rice then toss remaining ingredients in the pot to makes this a beautiful one-pot meal.

Ingredients:

1/2 cup Brown Rice Cous Cous

1/2 tsp. dried thyme spice

1/4 tsp. sea salt

1/8 tsp. freshly ground black pepper

2 Tbl. fresh lemon juice

2 Tbl. olive oil

1 cup carrots, diced

1 cup celery with leaves, diced

1 cup red bell peppers, diced

10 green olives, roughly chopped

 

Method:

1. Cook brown rice cous cous according to package instructions. Add salt, pepper, thyme to pot.

2. After cous cous is done cooking, set aside off heat for 10 minutes, then stir in lemon and olive oil. Set aside another 10 minutes.

3. Add fresh veggies and olives to cous cous, and stir to combine.

4. Enjoy!
