Delicious Pulled Pork in Flourless Wraps
Using the crockpot on a weekend night is a great way to cut your kitchen time in half during dinner time. Pulled pork is a crock pot favorite for us and this week I used a flourless wrap for a nutritional boost in this meal.
Start by slicing a medium sweet onion, then toss into crock pot.
I found Maverick Farms Boston Butt Roast at Publix Greenwise. This pork is superior to typical pork in the grocery store. There are no pesticides, hormones, or antibiotics. The animals are never fed animal byproducts either. This is very high quality meat and I was delighted to find it at Publix!
Place your meat on top of the sliced onion, then season with seal salt, fresh ground black pepper, and paprika.
Cover, set crockpot to Low and let cook all day 8-10 hours.
By the end of the day, your house will smell amazing and now this meat is ready to be shred. It pulled apart so easily, you just need two forks to separate out the fat. This piece was bone-in and the meat fell off the bone without hesitation.
Now for your flourless wraps…
Featuring super star, collards greens! These are considered a cruciferous vegetable, like broccoli and brussel sprouts, despite their leafy appearance. You’ll want to add these to your diet if you haven’t tried them. These huge leafs are wonderful for flourless wraps, all you have to do is blanch them.
Bring a big pot of water to boil, meanwhile, rinse each leaf well in a strainer.
Tossing each leaf into boiling water for about 60 seconds. Boil leafs 1 or 2 at a time.
Rinse with cold water, then lay each leaf flat on a plate when done.
Now you are ready to roll!! Lay collard flat on plate, cut off the large stem. Place your filling into wrap, you can add your bbq sauce at this point.
Fold left and right sides of leaf over pork then roll up. Secure with toothpicks. Repeat until you have desired amount of rolls.
Dinner is served! Dressed with Organic Strawberries on the side.
