Save Big At Sustainable Bedner’s Farm

I love a good bargain, but when it comes to my health and the health of my family, I can only bargain so low – that I why I skip on processed foods, they are so expensive! Good thing we have a local farm with fresh produce that is grown in a SUSTAINABLE way. I spoke with the owner at Bedner’s and he told me they have not used pesticides or herbicides for 4 generations!! How wonderful is that :). I was beaming with joy when he told me! He said to get certified organic, they would have to shut down operations and the cost of their produce would be much higher. I’m glad he chose to stick with being a SUSTAINABLE farm and not organic.

This week I went to Bedner’s and spent $35 on SUSTAINABLE and local produce!! This is what I got:

·        3 Baby bok choy, 3 large carrots for juicing,

·        2 macintosh apples, 5 organic gala apples ,

·        2 barlett pears, 2 bunches of beets,

·        2# bag onions, 1 bunch kale, watercress, cilantro,

·        4 lemons, 3 limes, 4 red bell peppers, 4 Georgia peaches,

·        2 bunches asparagus, 2 haas avocados, dried dates.

This much produce from the grocery store would have cost twice as much or more.

I was excited to whip up some good eats with my farm fresh produce. This colorful delight below is my Superfood Salad, made with: watercress, red bell peppers, avocado, pumpkin seeds, and goji berries. I topped it off with lavender vinegar from The Ancient Olive in Delray Beach for an antioxidant rich lunch!

Super Food Salad Recipe

2 cups Watercress (or dark leafy greens of choice), washed and chopped

1/2 cup Red bell peppers, washed and chopped

2 Tablespoons Pumpkin seeds

1/4 Avocado, diced

1 Tablespoon Goji berries

Method:

1. Wash and chop vegetables.

2. Arrange on plate watercress, bell peppers.

3. Sprinkle with pumpkin seeds, avocado, and goji berries.

4. Drizzle with high quality balsamic vinegar.

5. Enjoy!

Tips for Eating Well + Saving Money

·  Shop at your local farmers market

·  Buy fresh produce that’s in season –  it tastes better and will be on sale!

·  Create a fresh salad with your favorite market produce

·  Cook up a whole chicken, use leftovers to make chicken salad, make homemade chicken soup with leftover chicken bones (much cheaper than broth at the store, freeze leftovers)

·  Make large batches of soup or chili, freeze leftovers or bring for week day lunches

·  Enjoy! Full and happy bellies for all :).

Juicing: Is It Good For You?

Continuing to gain popularity is the idea of juicing as a way to detox your body or a means to lose weight. Juicing is when fruits and vegetables are squeezed, pressed, or mashed to extract the juice from the rest of the food, for quick and easy consumption. The idea is that by ingesting these things in juice form we are giving our digestive system a rest, as well as easily increasing our daily intake of many important vitamins and nutrients. While it sounds great in theory, here are a few things to consider:

One of the first things to consider is the time spent juicing. It can be a drawback for many people, at least it is for me. You could easily find yourself spending hours preparing your fruits and vegetables, juicing them and then cleaning your machine. You can make juices ahead of time, they should last for 24-48 hours when kept cold. Some of the nutrients will dissipate at time goes, but you can shake up the juice if it separates and enjoy some in the afternoon that you made fresh that morning or the morning before.

By extracting the juice and leaving behind the meat or pulp of the fruit or vegetable, you are missing out on a very import thing: fiber. Fiber can help with everything from lowering a person’s cholesterol, regulating blood sugar to preventing constipation. The fact is, most American’s do not get enough fiber in their diets already, so utilizing something like juicing on a regular or exclusive basis further reduces our intake of this very important nutrient. Juicing is beneficial for those with chronic digestive conditions such as Crohn’s disease or Ulcerative Colitis, when less fiber is ideal. Juicing can be very helpful for these conditions.

Juicing does provide an alternative for people who have a hard time eating their daily recommended amounts of fruits and vegetables. These foods are extremely important to achieving and maintaining a healthy life. Because of its liquid form, juicing does allow your body to absorb the vitamins, minerals and nutrients contained in the juice much easier than when eating their wholefood counterparts. This is much like taking a liquid vitamin supplement. A liquid daily multiple, such as Liquid Health’s Complete Multiple, provides whole food based vitamins, minerals and nutrients, as well as the all important fiber that’s missing when fruits and vegetables are juiced.

It’s important to be aware of your fruit and vegetable intake and what your daily needs are. It is recommended that we have 2 cups (4 servings) of fruits and 2.5 cups (5 servings) of vegetables a day. The thing to be careful of when drinking fruit and vegetable juice is that it can be really dense with calories and not fill you up the way eating that same fruit or vegetables would, so you can really add to your caloric intake if you’re not careful.

Nothing can replace a healthy diet and consistent exercise, but juicing does provide an option for increasing our daily intake of many important vitamins and nutrients. At the end of the day, juicing is better than not eating those fruits and vegetables at all. But, as with most things, moderation is key to insure a healthy balance of everything our body needs to function on a healthy and efficient level.

1. Want to know how to remove makeup and are unhappy with the makeup remover you are using now? Try this, almond or sesame oil. Take the oil and apply it with a cotton ball or soft cloth. Almond and sesame oil will remove all traces of makeup, including waterproof mascara quickly and easily. Simple.

2. Here is an oldie but goodie do you have puffy eyes? All you have to do is place thin, cool slices of cucumber on your eyes. Leave the cucumber slices on your eyes for 15 minutes and remove. The puffiness will be gone….magically. You can also use the cucumber to tone your face. Use either the slices or the juice. Leave on your face for 10 to 20 minutes and then rinse thoroughly. If you do not like cucumber you can try grated potato will also remove puffiness from your eyes.

3. A great one reminds me when I was a kid. Do you use those pore strips? Expensive aren’t they? Well all you need to do is use a thin layer of non-toxic white Elmer’s Glue. As a kid we all peeled it off our hands. Now as an adult, spread a thin layer on your face, let it dry, and peel off and there you have your own pore strips. Keep well clear of eyes.

4. Do you have apple cider vinegar in your house? If so you can mix 1/4 cup organic apple cider vinegar with 1 cup water to use as clarifying shampoo, then use your usual conditioner.

5. Ever wonder how to get those yellow stains off your nails? Well you can use whitening toothpaste, scrub nails if you like you can add lemon juice for extra bleaching power.

How My Dog Cooled Off in This Summer Heat!

This is my dog Cali, if you follow me on Facebook, you’ll see that I capture photos of her often. What can I say, she’s my baby girl. So cute and friendly!

This weekend she woke me up at 6am, my furry alarm clock 🙂

Being a busy working women, wife, and furmom, I’m often on the go. The other day, I had to drop Cali off at the vet for a checkup and I brought a healthy smoothie with me. Nothing complicated and I even made it the night before. Remember being busy means you have to take time to pre-prep your food.

My tips for pre-prepping food are:

  • Make your Smoothie the night before (like I did when I had to take Cali to the vet)
  • Make fresh Salads and put them in BPA free or glass Pyrex containers in the fridge so when preparing your lunch the next day – it will only take 5 minutes
  • Pre-make your protein on Sunday (animal or non-animal based meals such as chicken, beef, fish, a bean stew or a nice tofu or tempeh dish)
  • Make sure you have prepared your snacks for the week. Having snacks ready to go and keeping them in your car, in your bag or at works will keep you from eating junk.

Snacking can be delicious and it does not have to cost $4.00. Do you ever notice that every bar at Whole Foods (healthy or not healthy costs about $4.00)?

When I’m out and about for hours on end, I like to bring a snack. Instead of grabbing a Larabar or Think Thin bar, I have my trusty protein balls on hand. These babies are handy to stash in my purse and give me extra energy when I’m on the go. They are nut free, since as you know, I don’t tolerate nuts very well. I’m a sensitive foodie!

So here’s my secret weapon when I’m out and about and need some delicious fuel.

Berries and Protein Balls - picmonkey

Recipe:

¾ cup pumpkin seeds

2 Tablespoon flax meal or ground chia seeds

2 Tablespoons coconut oil

2 Tablespoon raw honey

2 Tablespoons dried goji berries

¼ cup coconut flakes, optional

Combine all ingredients (except for coconut flakes) in a food processor. Use a tablespoon to scoop out batter then form into balls, you can use 2 tablespoons if you like and form balls about the size of a golf ball. Tip: wet hands with water then press balls and roll to form in a ball so they stay together. Optionally, roll each ball in the coconut flakes until coated and refrigerate until chilled.

Enjoy on the go or with a bowl of fresh berries to supercharge your day!
