Turkey Thighs in the Crockpot

Turkey is not just for Thanksgiving! Try turkey thighs in the crockpot, succulent fall off the bone meat. So good and flavorful. Dark meat is richer tasting than white, but the caloric difference is actually minimal, contrary to popular belief. Comparing ounce per ounce, dark meat has 50 calories and white turkey breast meat contains 46 calories. Chef for a Day at Quantum House

On Sunday, Amy Gafney and I participated in the ‘Chef for a Day’ program at Quantum House by making dinner for the current guests. Quantum House is located on the campus of St. Mary’s Hospital on 45th Street in West Palm Beach. It’s a place for people to stay while their children are being treated at the hospital. What they offer to families is a sanctuary to rest, have meals, and have one less thing to worry about for a moment.

The families we cooked for were wonderful and very appreciative. They enjoyed the healthy dishes we made. The healthy spread included chicken and broccoli pasta salad, quinoa salad with tomato, cucumber, feta, and cranberries. Side dishes included cucumber salad, crusty bread, and a fresh garden salad. For dessert, Amy made a divine apple crisp served with all natural ice cream.

Happy St. Patrick's Day Green Smoothie!

Warm Rice Salad

This is a quick lunch I threw together in just a few minutes. I had leftover black rice so I heated that for a minute then topped it with hummus, salad greens, carrots, snap peas, zucchini strips, and a few pieces of papaya. This was a very satisfying and healthy lunch. I like to have cooked grains or beans in the fridge most of the time, this has been a huge time saver for me time and time again. I also like to have cooked kale on hand, in addition to fresh veggies. Dress with a little olive oil, dried or fresh spices, a little vinegar and you’ve got yourself a meal in no time!

Get your local produce at Delray Beach Green Market


It was a beautiful morning this past Saturday and the perfect weather to stroll through the open air green market in Delray Beach! There are so many wonderful local vendors selling fresh and delicious fruit, vegetables, eggs, seafood, meats, flowers, pasta/sauces, breads, guacamole, even pet treats!

I’m a sucker for fresh produce so I headed over to Thomas Produce stand first and picked up bananas, cucumbers, Florida navel oranges, and sweet potatoes. Everything was very fresh and I especially liked the cucumbers because they did not have the typical wax coating you see on grocery store cucumbers. I cut those up in spears to use for dipping in hummus. Thomas Produce is located at Glades and 441, how’s that for local!


Next stop was Harvest Time market that was selling lovely strawberries grown locally at their Lake Worth farm. I was excited to see their sign that advertised U-Pick Strawberries, yum! I’ll be making a special trip there during season which is November thru May.


Green Market season across Palm Beach county is October – May. Be sure to visit your local vendors and purchase their special offerings. It’s a great way to meet the people who are providing your local produce and unique foods and crafts. Talk to them and show your appreciation by purchasing their products.
