Crockpot Chicken Chili

Crockpot meals are an all time favorite for me, especially as a new mom. Throw in all the ingredients and let the crockpot so all the work! Delicious meal and leftovers to boot!

Ingredients:

1.5# organic chicken breasts or thighs (add whole, shred once cooked)

1 jar (16 oz) organic salsa

1 can black beans (do not drain)

1 can pinto beans (do not drain)

2 tsp. ground cumin

2 tsp. chili powder

Topping:

Sliced avocado

Fresh cilantro

Method:

1. Add all ingredients to crockpot (juice and all from canned beans).

2. Cover and set to low and cook for 5-7 hours.

3. Remove chicken from crockpot, shred and return to crockpot, stir then serve.

4. Taste and season with more salt if needed.

5. Enjoy!

Yield: 7 cups

Roasted Vegetable Platter with White Citrus Vinaigrette

Some nights you throw all your veggies into the oven to roast then for some crunch you slice up your cruciferous veggies like fennel and marinate in a tangy dressing. This is that meal and it’s oh so pretty and tasty. You could serve this at a party because it looks fancy!

Ingredients:

Fennel bulb, sliced

8oz sliced mushrooms

8 oz asparagus, ends trimmed

3 parsnips, sliced

Pinch salt and pepper

Dressing:

2 T. white balsamic vinegar

2 T. organic olive oil

2 T. juice of fresh orange juice

1 tsp. fresh orange zest

1/8 tsp pink salt and black pepper

1/8 tsp. dried thyme

Method:

1. Preheat oven to 400 degrees.

2. Line 2 baking sheets with parchment paper for easy cleanup.

3. Rinse and shake off excess water from mushrooms, clean and trim asparagus, slice parsnips.

4. Arrange onto baking sheets then spray with grapeseed oil and sprinkle with salt and pepper.

5. Bake mushrooms for 30 minutes, asparagus for 15 minutes, and parsnips for 30-40 minutes.

6. Set aside to cool.

7. Slice fennel and toss with ¾ of dressing. Allow to marinate for 30 minutes at room temperature.

8. Arrange roasted veggies on a large platter along with fennel. Serve with dressing on the side for dipping.

9. Enjoy!

Yield: 4 servings as appetizer/snack

Gourmet Artichoke Spread At Local Green Markets

There are so many local green markets popping these days and it’s exciting when you find a vendor that makes amazing food you want to keep going back for every week.

Dani Michaeli, owner of Dani’s Fun Food, always greets you with a smile and offers samples of his delicious creations with homemade pita chips (not gluten free) for dipping. Dani makes the very best in hummus and tapenade olive spreads. My favorite find made fresh daily from Dani is his Artichoke Spread. It’s creamy, yet light at the same time. All organic ingredients and gluten free as well.

I’ve enjoyed it spread on top of cooked eggs or with crunchy veggies. It doesn’t last long enough in my house to get more creative than that.

I imagine making it myself would take hours and hours to prep the artichoke and perfect the seasoning then adding in just the right amount of olive oil. I’m gonna leave this one up to Dani and I’ll happily buy this at the green market when I get a chance to stop in.

West Boca Green Market: Fresh + Local At It’s Best

Have you heard? There’s a new green market in West Boca! It’s open year round at the grounds of Olympia High School (just North of Glades on Lyons Road) every Sunday 8:30am – 2pm, rain or shine. I love green markets and this one is close by so I’ll be there a lot! If you are looking for farm fresh produce, a wide selection of foods, everything from breads, desserts, gluten free, paleo, vegan, coffee, tea, made to order juices, grilled foods. Eat there at the benches and tables for breakfast + lunch or take your food to go. They also sell a variety of crafts and jewelry.

Here is what I picked up on Sunday!

Farm Fresh Produce: non-GMO Corn Smile (YAY!), Georgia peaches, lemons/limes, organic blueberries.

Three Anns dried/unsweetened pineapple, raw goat’s milk feta, Dani’s Fun Food organic falafel (made fresh daily). Dani’s falafel are gluten free and taste great, he makes them fresh the day before. I also sampled the artichoke dip and wish I bought it, so that’s on my list for next time! Dani also makes a variety of hummus, all very fresh.

Raw Goat’s Milk Feta with Organic Blueberries

If you are into traditional ways of eating which includes raw dairy, you can find it at the West Boca Green Market. They also sell farm fresh eggs.

Raw dairy is popular to those who believe it’s best to consume dairy with all of it’s healthy bacteria and enzymes. Some people tolerate raw dairy very well and even thrive on it, while they cannot tolerate standard pasteurized dairy because all of the healthy bacteria and enzymes are killed during the pasteurization process. For more information, check out the Weston A. Price Foundation website and I also recommend reading Nourishing Traditions by Sally Fallon for more about traditional foods. She’s one of several expert teachers from my Health Coaching school, The Institute for Integrative Nutrition.

Three Anns dried fruit made without any added sugar. There were several varieties to choose from including apple, peach, pear, pineapple, banana, sweet potato. I chose pineapple and really enjoyed it! Chewy and sweet, but not overly sweet like most dried fruits. I’ll be back for more and will definitely check out the other varieties too!

Simple Steps To A Healthier You!

Do you want to eat healthier but think it’s too complicated or means only eating salads? There are so many simple steps you can take to enhance your health. It starts by taking action today and jumping in for the challenge! You are worth it and wouldn’t it be wonderful to feel great and look fabulous, and have a healthy?

Top 10 Tips to a Healthier You:

  1. Add creamy avocado slices to your burgers and sandwiches instead of mayo or fancy aioli (i.e. mayo) spreads.
  2. Skip the deep-fried french fries and order baked sweet potato instead or grilled veggies.
  3. Start the day with a big glass of water and squeeze a whole lemon or lime in the glass, this will hydrate and alkalize your body instantly! You’ll hydrate and get a boost of energy first thing in the morning.
  4. Make quinoa instead of white rice, they both take 20 minutes to cook. Quinoa is a superfood and contains more protein, fiber, and healthy nutrients than white rice. It’s absorbed slower in your body for sustained energy too.
  5. Upgrade your peanut butter to one made with just peanuts and salt, skip the ones with added sugars and oils. Try almond butter too.
  6. Switch from conventional milk to Organic milk or yogurt. Organic dairy tastes better and it’s not full of antibiotics, pesticides, herbicides, or added hormones.
  7. Shred carrot or zucchini into your favorite pasta sauce. It will thicken it up and add tons of nutrients!
  8. Make kale chips for a snack instead of fried potato chips.   9. Skip the coffee and drink green tea. Why you ask? Green tea is chock full of antioxidants and is an alkalizing drink, coffee is highly acidic and can disrupt digestion, cause jitters and keep you up late. Green tea contains far less caffeine so you get a milder lift. Choose decaf green tea or herbal tea later in the day so it won’t interrupt your sleep cycle.
  10. Eat organic apples! They are on the dirty dozen list rated for higher pesticides than other produce. Check out the EWG (Environmental Working Group) list for the full dirty dozen list: http://www.ewg.org/foodnews/summary.php to be in the know of produce is highly recommended to purchase organic. Also, check out the clean fifteen list on the same page that reveals the 15 fruits and veggies with the least amount of pesticides so you can skip organic.
