Mango Chicken Featuring Mom and Me Jams {Mango Jam}

Ever since I heard about the new West Boca Raton Green Market, I’ve made it there almost every week to seek out delicious foodie finds. I spotted Katrina, the owner of Mom and Me Jams with her wide selection of colorful and homemade jams. Chatting with Katrina about the jams, I learned that everything is tripled sterilized and made fresh on a weekly basis – take that Welch’s grape! She had me at homemade, preservative free, family recipe. Now that’s made with love and doesn’t food made that way taste so much better!

I sampled a few flavors by the spoon and was thrilled by the idea of mango jam, who would have thought to make this? I’m so glad she did!

I could have put in on toast or oatmeal, but I craved something savory for this sweet delight. A sweet and savory dish was born.

Mango Chicken and Sweet Potatoes over Spinach

This one pan dish pleases a crowd. I made it for my mother-in-law and her mother when they came into town then I made it again tonight. It’s delicious and satisfying, I even took my mother-in-law to the green market last Sunday and she picked up a jar of her own. Now she can recreate this back home in her kitchen too.

Ingredients:

1-2 Tablespoons coconut oil

1 medium onion, chopped

1 large sweet potato or garnet yam, chopped

1#-1.5# chicken breast, cut into cubes

3 Tablespoons Mom and Me Jams {Mango Jam}

sea salt and fresh ground pepper, to taste

2 cups fresh spinach per plate, optional to enjoy with cooked dish

Method:

1. Chop onion and sweet potatoes.

2. Heat pan to medium then add 1 Tablespoon coconut oil. Coat pan with coconut oil then add onion and potatoes.

3. Stir onion and sweet potatoes in pan to coat with oil, then turn down heat to medium-low and cover.

4. Cook veggies 10-12 minutes until fork goes through easily, you want the veggies al dente at this point.

5. Turn heat up to medium again. Push veggies to outside of pan then add cut up chicken breast to middle of pan and top with mango jam.

6. Turn chicken over and cook all sides, stir to distribute mango jam over chicken. Add 1 Tablespoon coconut oil to pan, if needed.

7. Turn heat down to medium-low and simmer 5 minutes with cover on pan.

8. Check to ensure chicken is cooked through and no longer pink, juices will run clear from chicken.

9. Turn heat back to medium for final sear and toss chicken, onions, sweet potatoes with mango jam. Add sea salt and fresh ground black pepper, to taste.

10. Serve hot over a bed of fresh spinach.

11. Enjoy!!

How My Dog Cooled Off in This Summer Heat!

This is my dog Cali, if you follow me on Facebook, you’ll see that I capture photos of her often. What can I say, she’s my baby girl. So cute and friendly!

This weekend she woke me up at 6am, my furry alarm clock 🙂

Being a busy working women, wife, and furmom, I’m often on the go. The other day, I had to drop Cali off at the vet for a checkup and I brought a healthy smoothie with me. Nothing complicated and I even made it the night before. Remember being busy means you have to take time to pre-prep your food.

My tips for pre-prepping food are:

  • Make your Smoothie the night before (like I did when I had to take Cali to the vet)
  • Make fresh Salads and put them in BPA free or glass Pyrex containers in the fridge so when preparing your lunch the next day – it will only take 5 minutes
  • Pre-make your protein on Sunday (animal or non-animal based meals such as chicken, beef, fish, a bean stew or a nice tofu or tempeh dish)
  • Make sure you have prepared your snacks for the week. Having snacks ready to go and keeping them in your car, in your bag or at works will keep you from eating junk.

Snacking can be delicious and it does not have to cost $4.00. Do you ever notice that every bar at Whole Foods (healthy or not healthy costs about $4.00)?

When I’m out and about for hours on end, I like to bring a snack. Instead of grabbing a Larabar or Think Thin bar, I have my trusty protein balls on hand. These babies are handy to stash in my purse and give me extra energy when I’m on the go. They are nut free, since as you know, I don’t tolerate nuts very well. I’m a sensitive foodie!

So here’s my secret weapon when I’m out and about and need some delicious fuel.

Berries and Protein Balls - picmonkey

Recipe:

¾ cup pumpkin seeds

2 Tablespoon flax meal or ground chia seeds

2 Tablespoons coconut oil

2 Tablespoon raw honey

2 Tablespoons dried goji berries

¼ cup coconut flakes, optional

Combine all ingredients (except for coconut flakes) in a food processor. Use a tablespoon to scoop out batter then form into balls, you can use 2 tablespoons if you like and form balls about the size of a golf ball. Tip: wet hands with water then press balls and roll to form in a ball so they stay together. Optionally, roll each ball in the coconut flakes until coated and refrigerate until chilled.

Enjoy on the go or with a bowl of fresh berries to supercharge your day!

The Blueberry – Natures Blue Wonder Fruit

Summer time means loads of blueberries are ripe for picking. You may be eating tons of blueberries this time of year because they taste great, but these amazing berries are also great for your body. Ever look at a Blueberry and wonder, why am I eating this little blue berry? What benefits are hidden in this little sweet berry?

Well here is a little about the wondrous superpowers hidden in this little sweet and wondrous blue fruit.

Blueberries are a very powerful antioxidant for your health and wellness, offering great benefits to the nervous system.  Extensive research data has also shown that blueberry consumption has significant brain health enhancing powers.  Not only does blueberries consumption offer improved brain health, but it has also have been linked to significantly slow down the progression of cognitive deterioration associated with aging.

We all know that berries in general are considered to be low in terms of glycemic index, and recent studies have found that those who ate 3 servings of low glycemic fruit per day saw a significant improvement in their blood sugar regulation over a 3 month period (Hemoglobin A1c).

Another one of the great powers of our little Blueberry is that it carries a tremendous amount of oxidative powers shown to have a strong effect on cardiovascular performance and assisting the entire body in its fight against cancer, especially colon cancer by keeping the digestive track healthy.  Aside for being beneficial to cardiovascular health, incorporating blueberries into your diet can have  a tremendously positive effect on HDL  levels, (Good cholesterol) helps to lower triglycerides, and also protects LDL Levels (Bad cholesterol) from oxygen damage which can cause blood vessel and clogging, which in turn will keep your heart healthy giving you a healthy blood pressure level and  a healthy functioning heart.

Now that you have learned just a small bit of what Blueberries offer you, and how important it is to utilize the great powers they possess, make the special effort to include them to your diet by adding them to cereals, smoothies or just enjoy them freshly washed out of the box. Wild Blueberry-Ginger Juice

Ingredients

· 1/2 cup sugar

· 1/2 cup water

· 1/4 cup coarsely chopped peeled fresh ginger

· 6 (2-inch-long) strips lemon rind

· 4 cups wild blueberries

· 2 teaspoons grated peeled fresh ginger

· 2 (10-ounce) bottles club soda, chilled

· Ice cubes

· Lemon rind strips or lemon slices (optional)

Preparation

1. Combine first 4 ingredients in a medium saucepan. Bring to a boil, stirring until sugar dissolves. Remove from heat; let stand 15 minutes. Place pan in a large ice-filled bowl for 5 minutes or until cold. Pour syrup through a sieve into a pitcher; discard solids.

2. Place half of wild blueberries and grated ginger in a blender; process 20 seconds or until smooth. Pour wild blueberry puree through a sieve into pitcher, pressing with the back of a spoon to remove as much juice as possible; discard solids. Stir juice into syrup mixture. Repeat procedure with remaining wild blueberries and grated ginger. Cover and refrigerate until ready to serve.

3. Gently stir club soda into wild blueberry mixture. Serve immediately over ice. Garnish with lemon rind strips or slices, if desired. Serves 5 (serving size: about 1 cup)

Not Your Jarred Salsa & Guacamole

Avocados are in season and they are so good you’ll want to put them in every dish! Yes they are high in fat but this type of fat is non-saturated, it’s great for your hair, skin, and nails ladies. Meals with healthy fats are more satisfying so eat up!

Both of these recipe take 5 minutes to make so no need to buy the pre-made stuff.

Homemade Guacamole (vegan, gluten free, dairy free)

Not Your Jarred Guacamole

Ingredients:

2 ripe avocados

half bunch of cilantro

juice of half lime

sea salt to taste

Cut each avocado in half, then remove pits. Peel off skin, should peel off easily avocados are nice and ripe. Mash up first avocado, then dice up the second one, toss in the same bowl. Take a half bunch of cilantro, rinse well and cut off stems. Roll the leaves up then finely chop. Toss cilantro in bowl with avocado, then add juice of half a fresh lime and a few pinches of sea salt. Toss then taste and season with more salt if needed.

Enjoy!

Serve with Organic corn chips or sliced jicama, celery, or cucumber.

Delicious mashed over baked sweet potato with your favorite protein!
